The Tandoori vegetable ( Vegetarian Barbecue) recipe is without a doubt everyone's favorite. The flavor of vegetables cooked in the tandoori style never beats any other tandoori recipe. This vegetarian recipe can be served as a starter and looks great with lots of colors when it is well arranged. This tandoori recipe is not only easy to prepare but also healthy.

Ingredients


Choice of vegetables
100 gms baby potatoes (parboiled and peeled)
100 gms mushrooms
100 gms okra
100 gms cauliflower florets
100 gms tendli (ivy gourd)
100 gms mixed peppers

Marination

250 gms Dahi
1.5 tbsp roasted gram flour 
1 tsp Haldi powder
2 tbsp red chili powder
1 tsp garam masala powder
1 tsp ginger garlic paste
Salt to taste
2 tbsp mustard oil
1 tsp crushed coriander seeds
1 tsp chaat masala powder

Garnish

Coriander leaves
onions slices
lemons halves

Method

Cut the vegetables into large pieces.

Marinate.

In a bowl, add 250 g of Dahi, 1.5 tablespoons of grilled gram flour, 1 teaspoon of Haldi powder, 2 tablespoons of red pepper powder, 1 teaspoon of garam masala powder, 1 teaspoon of ginger and garlic paste, salt to taste, 2 tablespoons of mustard oil, 1 teaspoon of crushed coriander seeds, 1 teaspoon of chaala masala powder and mix well.

Add the vegetables to the bowl, mix well and let marinate for half an hour.

Grill the vegetables on skewers, bake for 20 to 30 minutes at 200 degrees Celsius in a preheated oven.

Garnish with cilantro leaves, onion slices and lemon halves.
