Lentil Curry INGREDIENTS

1 1/2 cups green lentils, rinse and drained
3 tbsp tomato paste
14 oz can coconut milk
3 tsp curry powder
1 onion, diced
3 garlic cloves, minced
1 yellow pepper, diced
1/4 tsp pepper
1/2 tsp ground ginger
2 tsp garam masala
2 tsp sugar
2 1/2 cups water
2 tbsp olive oil
1 tsp garlic powder
1 tsp cumin
1 1/2 tsp salt


Healthy Lentil Curry Method:

  • Add olive oil, yellow pepper, garlic, and onion into the slow cooker.
  • Add lentils into the slow cooker and stir well.
  • Add all remaining ingredients and stir well.
  • Cover and cook on low for 5 hours.
  • Stir well and serve with rice.
